They say that the most important meal of the day is your breakfast. It sets you up in your body and your mind to face the day ahead. It gives you the energy for everything you think or do. When you are out camping, having a good breakfast can make a huge difference. Potatoes and Scrambled Eggs.

Use a bowl to make your scrambled egg mixture. You’ll need 8 eggs, a couple tablespoons of milk, some salt and pepper and a little chopped parsley. Whip it all up until everything is combined. While you’re doing this, put some pre-cooked potatoes into a frying pan, enough for four people and saute them in some olive oil. When the potatoes are nearly done and golden brown, add the egg mixture. Stir and stir until the egg scrambles. Serve with some tomato sauce or spicy tomato salsa.

Oatmeal or porridge is another source of fibre, vitamins, minerals and those all-important carbs. Simply make your porridge as you would normally. If you don’t know how to make porridge, follow the simple instructions on the side of the packet. Once made, you get to add some extra special ingredients. It’s your choice really. Go for the healthy option with berries or nuts, or the naughty version of brown sugar or chocolate chips.
Whole Grain Pancakes.
Here’s another carb filled breakfast that is so easy to make. For the pancake batter, measure out 2 cups of all purpose flour and 2 cups of whole-wheat flour. Mix that up with a tablespoon of baking powder, 2 teaspoons of salt and whisk it all up by blending 1 1/2 to 2 cups of buttermilk and a couple of eggs. Put your pan over a medium heat and pour out some portions of the pancake mix, just enough to coat the bottom of the greased pan. Once they are done on one side, flip them over. When finished, you can top them with maple syrup, lemon and brown sugar, jam, berries or whatever takes your fancy.
